Menu Plan Monday -

As some of you know I recently moved in the last 6 weeks, so from being in one place for over 10 years, the accumulation of cookbooks, the tried and true recipe box, recipe cut-outs, online recipes, etc... have taken over a small bit of my kitchen and office.  This week I pulled several tried and true recipes out for my dinner menu that have been lost (not really just piled somewhere).  With school almost over, and the tennis season for my husband coming to a close we will be sharing more dinners all together around our table. {big smile}!!

Here is my menu plan for the week.  I am looking forward to some old favorites - made new!


Roasted Green Beans -

1-2 lbs. Fresh Green Beans
Olive Oil
Sea Salt/Pepper
Horseradish
Sour Cream

I followed the directions as Jessica made them on the link above.  They are delicious.  I really like those Fired Green Beans that are popping up on restaurant menus lately.  This is a great healthy alternative, super easy too.  I made a simple horseradish sauce for dipping.  1 heaping tablespoon of horseradish and a 1/4 cup of sour cream.  This is definitely going to be on my menu again and again.

Hawaiian Turkey Sliders

1 lb. lean ground turkey
1 egg
1/2 cup panko bread crumbs
1/2 tsp. salt
chopped fresh parsley or cilantro
teriyaki sauce
fresh slice pineapple
Monteray Jack cheese

Combine turkey, egg, bread crumbs, and spices.  Divide into 8 small patties.  Grill one side, then after you flip, add terriyaki sauce, pinapple slice and cheese.  Grill until burger is completely cooked.  Serve on Hawaiian sweet mini rolls (deli dept.).

Menu Plan Monday

It's that time of the week already.  My menu plan is down, shopping done, let the cooking begin!  If you haven't planned dinner for tonight - expect delays at 6 PM, whining & crying children, low-blood-sugar husband, and a lot of FRUSTRATION!!  Do I hear an AMEN!!  Get planning now before it will cost you all of the above, and extra money!

Menu Plan Monday


It's been a looonnngg while since I posted, almost a month.  However, I was fasting from the computer world other than work during the Easter season to focus more on what I believe, what I hold true to my life, and to give me time in the things that I needed to do this past month.  I also MOVED! yes, picked up a whole household, and moved 11/2 miles away.  We sold our home, wanted something a little bigger for our family.  So, here I am, about a month later and FINALLY cooking in our new place.  I am still staying a little simple as spring is here and we like it a little lighter since it is so hot out already in south FL, and I am STILL unpacking, so simple is good!  I picked a few southwest meals this week in honor of Cinco de Mayo since we love Mexican food here at hour home.  Here's whats on the menu this week! 

  • Taco Salad - Beef for Hubs & the kids, Meatless for me - I'm going to have black beans this time!
  • Southwest Roasted Chicken Breasts/Mashed Potatoes/Green Beans-roasted squash/Fresh Fruit
  • Chicken  Quesadillas (left over roasted chicken), chips/salsa corn on the cob, fresh fruit
  • Breakfast for dinner (bacon, eggs, cinnamon rolls), fresh fruit smoothies
  • Grilled Turkey Hot Dogs, chips/dip, fresh fruit, mixed green salad

I am helping make cupcakes for a wedding this month, so I am doing a trial run with a carrot cake cupcake/cream cheese frosting.  I will post recipe/pics when I make them this week!

RECIPES


Salsa al Fresco a.k.a Fresh Salsa
2 containers grape tomatoes, chopped                                                 
1 medium onion, diced                                 
1 jalapeno, finely diced                                                                             
1 bunch fresh cilantro, rough chop         
1 lime, juice squeezed                                                                              
1 tsp. sea salt                                                                
1-2 garlic cloves, pressed/finely chopped
Combine all ingredients together, and finely chop or pulse in food processor.  Squeeze lime and sea salt over top, mix and serve with tortilla chips or in your favorite Latin recipes.
Taco Salad
Cook’s Tip: Adjust ingredients based on how many you will be serving.
Romaine Lettuce, torn/shredded                                                           
 1 lb. ground beef/poultry/pork                                 
1 pkg. taco seasoning                                                                                  
 1 onion, chopped                                                         
Cheddar Cheese, shredded
1 can sliced black olives, optional                          
1 can black beans, drained                                                                                    
1 can corn, drained or frozen                                                    
Sour Cream                                                                                                
Avocado or Guacamole                                                               
 Salsa                                                                                                           
Tortilla Chips                                                                      
Arrange lettuce on bottom of platter.  Layer ingredients ending with cheese.  Top with sour cream, guacamole, and your favorite salsa.  Serve with tortilla chips.
Easy Guacamole
2 ripe avocados                                  
sea salt                                 
½ cup sour cream                                                             
2 Tbls. Salsa                                               
juice from 2 limes, zest optional          
Mix ingredients together well.  Cover with plastic wrap touching dip so it does not oxidize.  Serve with chips.

Menu Plan Monday

It's that time of the week again.  I just got back from the farmers market and I am so excited to make some unbelievable meals for the week.
Here is what is cooking in our kitchen this week:

  • Southwestern Grilled Chicken Tostatas, Fresh Fruit, Fresh Salsa
  • Vegetable Barley Soup with Whole Wheat Lavish Bread w/ Hummus, Fresh Fruit (Meatless Monday)
  • Breakfast for Dinner (Eggs, Turkey Sausage), Fruit Smoothies
  • New York Strip Steaks, Mashed Potatoes, Green Beans
  • Turkey Hotdogs, Corn, Sliced Apples with Cinnamon Sugar
I made some delicious vegan vegetable barley soup and fresh mango salsa today. See the recipes below.

Vegan Vegetable Barley Soup

2 stalks celery, diced
1 sweet onion, diced
1 cup of diced carrots
2 garlic cloves, minced
3/4 pearl barley
2 plum tomatoes, diced
1/2 cup of corn kernels
1/2 cup of peas
2 cartons of vegetable broth
1 bay leaf
sea salt
fresh ground pepper
olive oil

Saute' on medium heat celery, onion, carrots, and garlic in olive oil in oversized skillet or dutch oven for 5 minutes.  Add barley and toast in skillet for 2-3 minutes.  Add bay leaf and broth, stir.  Add salt/pepper to taste.  Add tomatoes, peas and corn and cover for 30 minutes on simmer.  Remove bay leaf before serving.  Season to taste. Enjoy!
**This can be made in a crock pot.

Fresh Mango Salsa

1 mango, diced
2 ripe tomatoes
1 small sweet onion
1 jalepeno, seeds/vine discarded
1 small bunch of fresh cilantro
sea salt
fresh lime juice

I LOVE my manual food processor.  I pop all the ingredients (except Mango) in and pump away to the desired consistency that you like.  I like mine super fine like my favorite salsa from Chili's restaurant, and this manual food processor does the job. 

Check out Pampered Chef's new MANUAL FOOD PROCESSOR ,compact and perfect for this fresh salsa treat.  I have used my processor also for chicken salad, and fresh strawberry ice just this past weekend.

Spring and Summer all in one has sprung here in South Florida.  I am thinking grilling as much as possible this week.  I am knee deep in boxes and packing...dinner's have been working out, and my freezer and pantry are looking a little less cluttered since I planned on making meals out of them for a few weeks to lighten the load.

Last week I posted a recipe on Chicken Tortilla Soup, oh.... it was so good.  I shared with a few friends, and kept a few servings in my freezer for a quick lunch.  I got a little crazy with the chipoltles in adobo sauce, they seemed small, so I added two...next time, I will keep to the recipe.  The heat was good, but a little too hot for the family, and needed a dollop of sour cream to take the edge off.  Delicious though~

Menu Plan Monday


Spring is here!  What does that mean...for me- cleaning out the pantry and freezer for various reasons.  Here is my plan for this week so I am not caught off guard.  Since we are moving in the next three weeks or so, I am picking meals that we can use up pantry items and freezer items - less to pack is my method.....

  • Panko Chicken Fingers, Roasted Red Skin Potatoes, Green Beans with Garlic
  • Chicken Tortilla Soup, Quesadillas, Corn (recipe following)
  • Stir-Fried Pork with Green Beans, Brown Rice (recipe following)
  • Roasted Turkey Breast, Mashed Potatoes, Peas
  • Freezer Clean-Out (misc. bags of conveinence foods), Fresh Fruit Bowl
Chicken Tortilla Soup (adapted from Food Network Kitchen Easy Cookbook)

2 Tbls. vegetable oil
1 medium onion, chopped
2 cloves garlic, sliced
1 chipotle chile en adobo, minced
1 Tbls. chili powder
2 teaspoons kosher salt
6 cups chicken broth, low-sodium
1 cup corn kernals, fresh or frozen
1 ripe tomato
1 cup shredded chicken
1/2 cup cilantro leaves
1/4 cup fresh squeezed limes juice (2 limes)
corn tortillas chips/lime wedges (optional)

Heat oil in medium saucepan over medium-high heat.  Add onion, garlic, chipolte, chili powder, and salt, cook until onion softens, about 5 minutes.  Add the chicken broth, and bring to a boil, bring down and simmer for 10 minutes.  Add corn and simmer for 5 more minutes.

Pull the saucepan from the heat and stir in the tomatoes, chicken, cilantro, and lime juice.  Serve and top with chips/lime juice.  This is a fast and easy recipe!

Quesadillas - easy, quick, and served as a side with soup

1 flour tortilla per person
Cheddar/Jack or Mexican blend cheese
Queso Blanco (white latin cheese)-optional
Southwestern seasoning
Salsa/Sour Cream

Layer ingredients on one side of tortilla.  Fold over tortilla and press down.  Grill, oven bake or pan fry the quesadilla until desired done-ness or until cheese is melted.

Stir-Fried Pork- stir-fries can take a few extra steps, but worth the time with all the flavors.  If you have your ingredients prepped you can be sitting down to dinner in less than 30 minutes, start to finish.  Chicken and Shrimp could be substituted, however, the pork stays jucier.

1 lb. pork tenderloin, cubed
3 scallions, thinly sliced (white and greens separate)
3 cloves garlic, minced
1-1 inch piece of ginger, minced
1 T soy sauce
2 tsp. sugar
2 tsp. corn starch
1 tsp. sherry
1 tsp. dark sesame oil
5 T. peanut oil
1 lb. sugar snap peas or green beans
Kosher Salt
fresh ground pepper
1 T. Hoisin Sauce
hot cooked brown rice/Jasmine rice

Toss the pork with the scallion whites, half the garlic, half the ginger, the soy sauce, sugar, 1 tsp. of the corn starch, the sherry, and the sesame oil.  Marinate at  room temperature for 15 minutes.  Mix the remaining 1 tsp. of cornstarch with 2 T. water.

Heat a large skillet over high heat.  Add 1 T. of the peanut oil and heat.  Add the beans and the remaining garlic and ginger; stir-fry until the beans are crisp, but stay bright green.  Season with salt and pepper to taste and pour into a large bowl.

Heat the skillet over high heat again and add 2 more tablespoons oil.  Add haf the pork mixture, season with salt and pepper to taste, and stir-fry until lightly brown, about 2 minutes.  Add the first atch of pork to the beans.  Repeat with the rest of the oil and pork.  Return the beans and pork to the pan.  Add the hoisin and the cornstarch mixture.  Cook until the juices thicken, about 1 minute.  Mound the stir-fry on a serving platter or divide onto 4-6 plates.  Scatter the green onions over top and serve with hot rice.  Yummy!

Menu Plan Monday

Back to a normal week, no trips planned for a little while, and dinner will be on the table this week.
Here is what we will be having.

  • Grilled Mahi Mahi, Sauteed Zucchini and Onions, Fresh Fruit
  • Mama's Beef Brisket, Roasted Carrots/Onions, Mashed Potatoes (recipe following-slow cooker)
  • Grilled Chicken Caesar Salad Flatbreads/Fresh Fruit
  • Chicken Cutlets with Buttermilk Biscuits, Green Beans
  • Grilled  Angus Hotdogs, Corn, Fresh Fruit, Pasta Salad
Mama's Cowboy Beef Brisket

1 medium beef brisket , trimmed, but with some fat left
2 large onion, thick sliced
6 garlic cloves
3-4 carrots/potatoes, thick sliced  
1 bottle of Chili Sauce 

Place brisket in slow cooker.  Slice onions thick and place on top of brisket.  Add all garlic, minced over top.  Pour Chili sauce over and fill bottle half way with water and shake rest out over meat.  Cook on high for 3-4 hours.  Last hour add potatoes and carrots if you would like or cook on stove.  **Taste better second day- I like to make at night, then cool-reheat for the next day.  May need to thicken juices for gravy.

-use your sale ads from the paper or online to create your menu/shopping list (this is the part that saves you $$)-be flexible {plan 5-7 meals and pick from those-instead of saying you will have ___ on Monday-that may throw people for a loop and then not continue}-continue once a week to set aside time to do this-take input from your kids and family members-if you don't blog and you need accountibility to do this EMAIL your menu's to me (cookwithbarb@aol.com)- I would be glad to praise you for your efforts-help you with recipe ideas or give your resources-and overall be your own cheerleader to help you stop asking yourself

Here are my 5 menu ideas for the week!


I decided to go old school this week, and scan some of the thousands of recipes I have in books, tear-outs, or my faithful recipe card box.  As another fellow blogger mentioned in the past week, there are tons of recipes in fabulous blogs, and the internet site, but I never want to lose sight of some of my family's favorites and  those tried and true ones handed down!

So here is my 5 days of meals - no specific order - just when we feel like what's on the menu - and the shopping is done for the 5 below!

  •  Crustless Spinach & Feta Pie/Fresh Fruit (recipe below)
  • BBQ Grilled Chicken Quesadillas/Salad
  • Southwestern Grilled Chicken Ceasar Salad
  • Breakfast for Dinner (Mom's Pancakes, Chicken Sausage, Scrambled Eggs)
Crustless Spinach & Feta Pies (a quick take on Spanakopita)

1 T extra-virgin olive oil
1 10oz package frozen spinach, thawed
4 scallions, thinly sliced
3 eggs
1 T bread crumbs
2 t dried mint
1 1/4 t kosher salt
fresh ground pepper
pinch of cayenne
1/2 cup Feta cheese

Preheat oven 400 degrees.  Heat oil in skillet, and add drained spinach and scallions and cook, stirring until dry, about 4 minutes.  Transfer to colander and squeeze out any additional mositure.  Brush 4-6oz ramekins with olive oil and place on baking sheet.

Transfer spinach ingredients and rest of ingredients except Feta to a food processor-pulse until finely chopped.  Remove blade and stir in Feta.  Bake until edges are set, but slightly soft in center-about 20 minutes.  Turn oven off and leave for 5 additional minutes.  Invert onto plate and serve with a veggie salad or Tazatiki Sauce-Yum!

My variation:  I added a bit more Feta on the top, and a few cloves of garlic.  I also made mine in a 9x9 and doubled the recipe to have leftovers to share with my neighbor and have for breakfast!  I cut it into 12 pieces and served two per person.  :)

This week will be a fun week!  A fun week creating in the kitchen.  It's my oldest-6th Birthday.  Not only will be have a few celebrations throughout the week, there will be some yummy treats to go along with them-mostly sweets!
Here is one great recipe I will be making first for the family celebration!  Pictures will post tomorrow evening!

Which means, I must stay on track this week with some healthy meals to equal out a bit of that sugar...:)
Here is what will be cooking on my stove this week:
  • Easy Lemony Chicken Picatta with a Garden Salad/Linguine/Fresh Fruit (recipe below)
  • Balsamic Roasted Vegetable Sandwiches on Crusty Bread/Fresh Fruit
  • Guiltless Alfredo with Grilled Shrimp (held over from last week)-(recipe below)
  • Buffalo Cheese-Stuffed Burgers/Roasted Potatoes/Fresh Fruit
  • Grilled Mahi-Mahi over Field Greens/Fruit Smoothie Shots

Easy Lemony Chicken Picatta
(adapted from The Joy of Cooking)

Prepare Chicken Cutlets by sauteing boneless breasts in canola oil.  I like to put a light coating of flour/panko crumbs on mine.

Sauce:
Green onions or shallots
2 medium lemons
1 cup chicken broth
2 tablespoons of butter
any drippings left from resting chicken


Drain all but a tablespoon of oil in your fry pan from your chicken.
Add 2-3 tablespoons green onions or shallots, chopped and
saute for about 3 minutes.
Add lemon juice from 1-2 lemons based on taste.  Simmer for a minute or two and add broth.  Allow to reduce to 1/3 from original amount.  Finish with a few tablespoons of butter and any drippings that collected on resting chicken, allow to melt into sauce.  Pour over chicken and serve immediately.  **For a thicker sauce you can add a few tablespoons of flour/cornstarch/Wondra to thicken it up before adding the butter.  Capers can also be added for taste.

Guiltless Alfredo
(recipe from buddy Gevay :) )

2 cups low-fat milk
1/3 cup cream cheese
2 tablespoons flour
1 teaspoon salt
Blend these ingredients together in a blender until smooth.

On medium-high heat warm 1 tablespoon of butter, and add 3 minced cloves of garlic and saute about 3 minutes.  Add blended milk mixture, stir and cook for 5 minutes until thick.  remove from heat and stir in 1 cup grated Parmesan cheese.  Cover and let stand for 10 minutes.  Serve over pasta.  Garnish with fresh parsley.

Menu Plan Monday


Dinner this week is going to be a few comforting dishes.  Here in South FL our winter is starting to wind down.  With several days in the high 70's and hitting 80 a few times this week, stews, soups, and casseroles will be far and few between.  Luckily, we are able to grill out year-round which our family enjoys.  We love eating outside under the stars with the brisk Atlantic breeze.  So, before the winter starts to change in the coming weeks, we will be enjoying these comforting favorites.

  • Abolutely Delicious Low-Fat Fettiachini Alfredo with Grilled Shrimp, Garden Salad, Fresh Fruit
  • Swedish Meatballs with Egg Noodles, Green Beans, Cinnamon Apples
  • 30-Minute Itlaian Roasted Chicken, Sauteed Zuchinni, Fresh Fruit

Menu Plan Monday

I took a week off last week, and boy was I in a mess.  There was defiantly food in my house, but I felt myself sinking instead of swimming.  We ate out WAY too much last week for convenience instead of enjoyment-although we have had the most incredible weekend with date nights each night with each of our children individually. Our schedule was quite busy, but I still like to have my hot meals for my children at least~

I am back on the wagon this week, with lot's of plans for impromptu meals-ready to go...

Here is what is cooking in our tasty kitchen-
  • Roasted Turkey Caesar Salad with Fresh Fruit (left over Rotisserie Turkey Breast)
  • Individual Homemade Pizzas with our favorite homemade sauce, garden salad, fresh fruit (see instructions below)
  • Grilled Chicken Quesadilla's, Corn on the Cob, Garden Salad
  • Cheeseburger Pinwheels, Green Beans, Potato Chips
  • Beef Stew with Beer & Paprika, Biscuits
  • Leftovers- I just know we will have leftovers!  I plan to freeze some of the stew for another cool evening.
**Individual Pizzas can be made to suit any taste.  Take frozen bread roll dough (not frozen rolls), and place on your pizza stone or baking sheet for about an hour or two before eating and drizzle with olive oil.  When soft enough, pat out (have kiddos help), and top with your favorite toppings.  We like everything from traditional to our own creations.  This is also a quick lunch, so much more healthy than frozen pizzas and cheaper too.
C-man's favorite topping is turkey pepperoni and lotsa mozzarella cheese. Hubs enjoys sauteed Italian sausage and cheese, and my personal fav is pesto sauce with mozzarella and lot's of fresh garlic - watch out!  These can be made in your oven or on your grill.  Just be sure you brush olive oil on your grates before throwing down the dough.  Cook carefully for 1-2 minutes, flip and top~Baked in the oven can be for about 20-25 minutes or until crust is done at 350.  Of course you can make your own dough or purchase pizza dough, but we have come to love the convenience of the bread dough for quick planning in the kitchen.

Have a FANTASTIC week, I cannot believe we are already through the middle of the first month of the year. Time is flying past us, which make me want to remind you how important eating with your family is.  Gather round the nearest table and enjoy talking to one another (a lost art since hand helds have come to adorn every table I see when I dine out with my hubs-sad that people cannot put it away for the littlest time to enjoy real conversation.

Here I am again...back to reality...I have lived in a fantasy world for the last few weeks of dinner out, to-go, and cooking on the fly...It's back to basics, trying to clean out the pantry/freezer this month from all the grocery shopping done over the last month of cooking and entertaining.

Is menu planning going to be added to your resolutions goals?  It works, it cuts down on your grocery trips and bill, and allows you not to stress at 5 o'clock!

Here is what we will be eating at our home this week!
  • Spaghetti & Meatballs/Green Salad/Fresh Fruit - Plain and Simple to get the week started!  I do like our family recipe of  homemade sauce I triple/quad the recipe so I always have it available in the freezer-I have some vegetarian and some with meat added to the sauce.
  • Grilled Mahi Mahi/Green Beans/Fresh Fruit
  • Chicken Parmesan/Ceasar Salad/Fresh Fruit **using leftover sauce from spaghetti night or vice a versa
  • Cheeseburger Pinwheels/Green Salad/Applesauce
  • Leftover Buffet

4 large chicken breast
shredded Swiss/Monterrey jack
1 can of fat-free/reduced sodium cream of chicken soup
1/2 can white wine or chicken broth
large handful of croutons, crushed

Place chicken in 9x13 and cover with salt/pepper.  Combine soup and white wine, set aside.  Top each breast with cheese, and pour over soup mixture.  Top off with crushed croutons.  Bake at 375 until chicken is cooked thoroughly.  I like to cover with foil for first 30 minutes, then uncover to finish.

Turkey and Wild Rice Soup

1 cup shredded  carrots
1 cup sliced mushrooms
1/2 cup sliced celery
1/2 cup chopped onion
1 TBLS butter
1/2 cup flour
2 small cans of chicken broth (I like low-sodium)
1 can low-fat evaporated milk
1 1/2 cups cooked wild rice (I use the quick rice or brown rice)
1 cup diced turkey or chicken
1/4 cup toasted almonds
Salt/pepper to taste

Melt butter in large sauce pan over medium heat and saute carrots, mushrooms, celery and onion for about 4 minutes or until crisp tender.  Stir in flour, gradually add broth and milk, whisking until blended using a whisk.  Bring to a boil.  Stir in rice and turkey, reduce heat; simmer uncovered for 5 minutes.  Serve with toasted almonds on the top. Delish with leftover turkey or chicken!  This is considered a light recipe per 1 1/4 cup serving - 240 calories/8 fat/2 fiber

Menu Plan Monday

Well, it's that time of the week.  A "plan" will make your life a whole lot easier.  Hubs and I have quite a few evenings we are out of the house this week, but the kids still need to eat....... 

The coming weeks with holiday socials, and gatherings, I like to keep things simple.  For some reason the extra calories and goodies start to creep up around this time {grrrr~}.  I have several cookies I would like to try in the coming weeks, so check back to see what I came up with.  This week, I am doing the Smores Cups again to take with me to a weekly group shindig, you can find out about them here, Chai Spiced Cookies, and I will be making my MaMa's Rum Balls (as they need to ferment a bit). Here is what is cookin' up on our menu:

  • Lemon Pepper Baked Chicken with mashed potatoes, sliced peaches
  • Have Your Way Omelet's, Turkey Sausage, fresh fruit, Cinnamon Rolls
  • Slow-Cooker Chicken Tacos (or Taco Salad), corn on the cob, grapes
  • BBQ Boneless Pork Chops, roasted potatoes, best-ever cornbread, fresh fruit
  • Grilled Mahi Mahi over Field Greens, sliced peaches
  • Grilled Hot Dogs (nitrate-free)/Turkey Burgers, chips, fresh fruit
  • Left-Over Buffet

Menu Plan Monday

This week I am eating out of my pantry/icebox in reference to my previous post on curbing down a bit.  I found some great deals I got a few weeks back hiding in the bottom of the icebox, as well as some hidden favorites in the back of the panty.  Me, being a foodie, I am trying to come up with creative ideas to use what we have and my grocery trip will only be for necessities.  Here is goes....

This week we are having:

  • Turkey Tacos (shhh-don't tell hubs-he's not a fan of ground turkey)/field green salad/fresh fruit
  • Grilled Steak Burgers (thanks mom for the Ohmaha Steaks Gift Card)/deviled eggs/oven fries
  • Omelettes with chicken apple sausage/fresh fruit
  • Grilled Chicken Skewers with Sausage & Pancetta this is a great recipe we have repeated it so many times./Fresh Cut Fruit/Green Beans
  • Philly Cheese Steak Sandwiches (I love this concept, done in minutes, and is delicious- and I am controlling the meat, etc.)/fresh cut fruit/chips
  • Chicken & Sausage Gumbo (craft show soup mix)/BEST Cornbread/Field Green Salad

What a great week of meals we had last week.  Our Roasted Turkey Breast was delish and so easy to make!! and those Maple Pretzel Chicken Tenders can you say..."died and gone to heaven..."  and the cornbread recipe was a definite keeper for the near future (suffing recipe),WOW!  I love being a foodie.  My waistline is still strinking which is a good thing.

This week we have a few things going on so we are keeping it simple.  Here is our menu for this week.
  • Chicken Parmesan/pasta/field green salad
  • Breakfast for Dinner (Scrambled Eggs/Bacon/Pancakes)
  • Grilled Morrocan Chicken with Israeli Couscous/mixed vegetables
  • Grilled Hot Dogs (Nitrate-Free)/celray/carrot sticks/chips/Applesauce
  • Grilled Mahi - Mahi Tacos/ Carribean Rice (brown rice made with water/pineapple juice-flakes of coconut)/ Black Beans

Happy November!- Can you believe we are here?  As the fall draws closer, I love having more fall-ish menu plan ideas than the same ol- same ol.  This week I will incorporate a few more comfort food items (according to my crew).  I am still plugging away at shedding some pounds so I eat all protein over veggies or a salad.  I am down 36 lbs, and would like to keep the momentum through the next month, since Thanksgiving is only one day....LOL! This week I will be uploading some terrific fall recipes, other than the APPLE WEEK & PUMPKIN WEEK of recipes.  What a fabulous time to get in your kitchen and feel all warm and cozy.  I also have a guest post this month on " Keeping Your Home Organized when the Holiday's are Around the Corner".  So link up as a follower through Facebook or through Google (to the right) so you won't miss the upcoming recipes, crafts, food gifts to give from your kitchen segment, 12 days of cookies, and much more through the next few weeks. Here is my plan for this week:

  • Chicken Parmesan/green beans/sliced fruit/garlic bread
  • Grilled Mahi Mahi and Shrimp over a Cesaer Salad, (kid's will have pasta with the fish)
  • Crust -less Spinach/Feta Quiche Pie (on last week's menu, but we ended up going out and it didn't make it to the table)
  • Autumn Stuffed Pork Chops (recipe below - from FoodTV-Quick Meals by Robin Miller)/mashed potatoes/applesauce (easy homemade)
  • Maple Roasted Chicken Tenders/corn on the cob/fresh fruit/California Corn Bread-recipe below
  • Roasted Turkey Breast w/gravy/roasted potatoes/green beans (I'm practicing my turkey basting recipe for Thanksgiving)

Autumn Stuffed Pork Chops

Ingredients

  • 2 tablespoons olive or vegetable oil, divided
  • 2 leeks, white part only, rinsed and chopped (I use sweet onion or whatever I have on hand)
  • 1 McIntosh or Granny Smith apple, cored and diced
  • 2 teaspoons dried oregano
  • 1/2 teaspoon dried rosemary
  • Salt and pepper
  • 1 1/2 cups unseasoned bread cubes (or cut up day-old bread)
  • 1/2 cup reduced-sodium chicken broth or enough to moisten bread
  • 4 (5-ounce) boneless pork chops, about 1-inch thick, trimmed of fat

Directions

Preheat oven to 400 degrees F.
Heat 1 tablespoon of oil in a large skillet over medium heat. Add leek and apple and saute 4 minutes, until tender and golden. Add oregano, rosemary, and salt and pepper, to taste, and stir to coat. Transfer mixture to a large bowl and add bread cubes and chicken broth. Mix well and set aside.
Using a sharp knife, slice pockets into chops by slicing horizontally into the side, and almost through to the other side. Season the outside with salt and pepper. Stuff chops with apple mixture, allowing stuffing to overflow out of pockets.
Heat remaining oil in a large skillet over medium-high heat. Add pork chops and sear on 1 side until browned, 3 to 4 minutes. Flip chops and transfer to oven to finish cooking for 8 to 10 minutes, or until cooked through.

I am trying out a few cornbread recipes over the next weeks to see which one I want to give as gifts for Christmas! Here is my first one to try, it is a cake-like style cornbread...

California Corn Bread

2 cups of baking mix (Bisquick)
1/2 cup cornmeal
1/2 cup sugar
1 TBLS. baking powder
************
Add to mix:
2 eggs, beaten
1 cup milk
1/2 cup butter, melted

Mix together dry ingredients.  Add eggs, milk, and butter.  Place in a 350 degree pre-heated oven in an 8" square pan and bake for 30 minutes or until golden.  I may put mine in a cupcake pan, and add a little chedder cheese to the ingredients.

Oh wow- it's been two weeks,  We have been out of town and then upon returning, event after event.  I miss our round{square}-table discussions with my family, and look forward to our evening meal tonight.

Menu Plan Monday

Monday's roll around so fast don't they.  Especially when you have had a busy weekend filled with fall crisp air (well sort of...).  We ate al fresco last night, the cooler evenings with just a little breeze a few miles from the Atlantic Ocean gives it that fall feeling.  Have you been sharing meals outside lately? Those of us in the south are still firing up our grills.  I love that!  This is why we call this paradise, right?

Here are the dinners my family will look forward to this week.  No particular order-just five meals that are planned and shopped for already.  Leftover Buffet always makes it mark one of our nights or for lunches, just depending on when the fridge starts getting stuffed with plastic containers-

  • Grilled Pizza Flatbreads (make your own-we have vegetables, fresh mozzarella, pepperoni, Italian sweet sausage, fresh basil, feta cheese), Roasted Vegetables and Apples

  • Grilled Beer Brats, Mashed Potatoes and Roasted Pumpkin (pre-made when roasted vegetables), Fresh Fruit

  • Taco Salad or Hardshells, Yellow Rice, Cut Peaches

  • Chicken Cutlets-Parmesan Syle, Wagon Wheel Pasta with Garlic and Fresh Basil, Fresh Fruit

  • Ham Steak, Granny Smith Applesauce, roasted carrots

This week's menu doesn't have any specific recipes.  Except I am going to explain my process of roasting vegetables.

Roasted Vegetables- this is my favorite way to get them in my diet, and cook up large batches for the week for lunch or dinner recipes.

I start out with a generous size baking sheet {like a jelly roll, or small lipped cookie sheet}, I personally like to cook on clay stoneware, we can talk more on that later. 

Any seasonal vegetables:
i.e. - Fall: squashes (acorn, pumpkin, zucchini {remember I live south}), large sweet onion or red, fresh garlic (whole pieces or halve the bulb), sweet potatoes, Yukon Gold {my favorite variety) potaoes, asparagus, (you can even add a few apples-as I did this week for my menu).

+ADD+ your favorite seasoning - {we're still going with fall for the example}, sea salt, fresh ground pepper, chopped garlic, fresh rosemary, a few sprinkles of cinnamon, cloves, ginger or apple/pumpkin pie spice-

Heat oven to 400 degrees.  Give a swirl of olive oil or any light flavor oil on your baking sheet.  Chop the vegetables in big pieces {they shrink}(except potatoes- you can cut them a medium cube).  Toss with favorite spices and flavors for your complimenting recipes.  Add a little more oil to the top of the vegetables, and bake for about 20-30 minutes or depending on what your vegetables are - potaotes take a little longer.  Check that they are fork tender.  You can always remove the softer ones before or add to pan later.

Serve hot or at room temperature.  Save for pizza toppings, pasta recipes, crusty vegetable sandwich, or other recipes for your week.  I try to make a large batch at a time so I can continue to use all week.  *Side note- you can also follow the instructions, but roast on your outdoor grill in a grilling basket.

Seasoning Ideas according to meals:

Italian Cooking: Toss with fresh garlic, rosemary sprigs, orgeano, parsley, basil, olive oil, Italian salad dressing, Balsalmic vinegar, sea salt, ground pepper-top with parmesan when they come out.

Greek Cooking: Toss with fresh lemon halves/quarters, oregano, chopped garlic, sea salt, ground pepper, parsley, olive oil, top with a little feta.

Southwestern:  Toss with chili powder, cumin (go easy), sea salt, ground pepper, onion powder, parsley, olive, oil, top with fresh cilantro when they come out.

Latin Flavor:  Toss with fresh limes quartered, sour oranges, fresh garlic, coriander, mojo marinade, olive oil, cumin (go easy), top with queso blanco (latin white crumbling cheese).

My favorite by far is the fall flavors-a little cinnamon, and all the others mentioned above in the fall example.

This week's menu consists of some conveinence foods.  We order from Omaha Steaks and have beef/chicken on hand which makes things easy.  I usually defrost the night before so I am ready to go.  I also love marinating different flavors on my chicken breast/pork chops/shrimp/fish when I come home from the market-pop into a freezer zip bag and lay flat in freezer.  Then you are all ready to go, flavors already fused into the meat-and dinner becomes a little easier.  Just take out the night before-leave in refriegerator to defrost over night and add a side dish and your all set.  I am also using my slow-cooker to make Sloppy Joes.  The recipe is enough for two meals for our family, so I will freeze half of it for another quick night.

Marinated Cilantro/Lime Grilled Shrimp over Linguine
