Menu Plan Monday -

As some of you know I recently moved in the last 6 weeks, so from being in one place for over 10 years, the accumulation of cookbooks, the tried and true recipe box, recipe cut-outs, online recipes, etc... have taken over a small bit of my kitchen and office.  This week I pulled several tried and true recipes out for my dinner menu that have been lost (not really just piled somewhere).  With school almost over, and the tennis season for my husband coming to a close we will be sharing more dinners all together around our table. {big smile}!!

Here is my menu plan for the week.  I am looking forward to some old favorites - made new!


Roasted Green Beans -

1-2 lbs. Fresh Green Beans
Olive Oil
Sea Salt/Pepper
Horseradish
Sour Cream

I followed the directions as Jessica made them on the link above.  They are delicious.  I really like those Fired Green Beans that are popping up on restaurant menus lately.  This is a great healthy alternative, super easy too.  I made a simple horseradish sauce for dipping.  1 heaping tablespoon of horseradish and a 1/4 cup of sour cream.  This is definitely going to be on my menu again and again.

Hawaiian Turkey Sliders

1 lb. lean ground turkey
1 egg
1/2 cup panko bread crumbs
1/2 tsp. salt
chopped fresh parsley or cilantro
teriyaki sauce
fresh slice pineapple
Monteray Jack cheese

Combine turkey, egg, bread crumbs, and spices.  Divide into 8 small patties.  Grill one side, then after you flip, add terriyaki sauce, pinapple slice and cheese.  Grill until burger is completely cooked.  Serve on Hawaiian sweet mini rolls (deli dept.).

Evening Wedding Cupcakes/ Toppers

This week a friend got married.  A few of us pulled together a cupcake bar in lieu of a formal wedding cake.  The bride and groom are young and were going the route of simple and what's in style.  I was so excited to help.

I was inspired by this flavor combination...
Who makes these flavors up?  So delicious.  I made these cupcakes for a scrapbook retreat a few months back and they turned out outrageous.  I thought they would be great for a spring wedding.  So I made fresh tasting lemon cupcakes (white cake mix as directed using these additions -> (made with milk instead of water) + zest of two lemons + lemon extract or pure lemon essential food grade oil +  1 box vanilla or lemon instant pudding (dry)).  Bake as directed, then cool completely.  I then filled the cupcakes with red raspberry preserves.  I used my classic butter cream frosting with zest of two lemons added + 1 tsp. vanilla &  1 tsp. lemon extracts.  To put these cupcakes over the top, I added pale yellow sugar dusting the top and pieces of this amazing chocolate bar (shown above) in each cupcake.  I just know they will be great for this beautiful occasion!





The toppers were made using Stampin' Up punches.  The scallop punch for the designer paper, the solid color is from a 1 3/8" circle punch, and the photos/dates were punched with a 1 1/4" circle punch for a great layered effect.  These will be used for the other cupcakes and other hor'duerves that will be served.  Toppers make food personalized and so much fun!

Chicken Salad - that petite, dainty flavorful addition to any spring or summer menu!



Let me just begin that I am TOTALLY in LOVE with chicken salad.  I don't want to say it doesn't matter what kind, because for me...it does matter.  I love that chunky, stuffed chicken salad that you get filled with goodies of all kinds, and I even love the big chunky plain-jane kind too.  Just not the smooshed pasty - flavorless variety.   Chicken salad isn't just for bridal or baby showers, it's for any day you want that refreshing taste of something light.  I am thinking about it right now as the thermometer is climbing in my beachy area.  Most chicken salad varieties are very similar with the same type of ingredients.  I don't buy Miracle Whip, but I know that sweetens chicken salad up, many varieties add fruit, and nuts too.  I suppose if you just like it plain that's okay too.

I have several go-to recipes I enjoy, so it is so hard to choose which one to share - so I will share a few that have adorned my table or I have brought somewhere to share.

The first is my adapted version from the Palm Beach Junior League Cookbook - "Worth Tasting".  I love being southern, and having some of those elements in the salad.

Chicken Salad
serves 6

4 cooked chicken breasts, cubed
1/2 cup pecans, toasted
3/4 cup celery, sliced
1 cup seedless red grapes, halved
sea salt to taste
pepper to taste
light mayonnaise, enough just to fold together ingredients. 

Combine ingredients as listed.  Place in refrigerator for a few hours before serving.  Serve over mixed greens, on a croissant, or on table water crackers.

The next version come from a good friend, Christina.  This chicken salad has appeared at many of our "mommy" functions, it is so addicting and so delicious.  If you don't like curry, just add a little.  It gives this dish a whole new flavor, so unexpected, you'll wonder why you never amped it up before!

Curried Chicken Salad

4 Cups Finely Chopped Cooked Chicken
3 (8 Oz) packages cream cheese, softened
¾  Cup dried cranberries, chopped
½  Cup sweetened flaked coconut, toasted
6 green onions, minced
2 celery ribs, diced
1 Tablespoon curry powder
1 Tablespoon grated ginger
½  teaspoon salt
½ teaspoon pepper

Stir together all ingredients.  It is best if made a few hours before hand to let
the flavors develop.  Serve on sandwich bread, croissants, or just plain.

A family favorite from a dear friend, Amy Johnson.  This is a great church potluck.

Baked Chicken Salad

2 cups cooked chicken, cut up
2 cups sliced celery
1 cup seasoned croutons (I like the cheese garlic variety from the produce area)
1/2 cup slivered almonds, toasted
1 cup mayonnaise
2 T. lemon juice
2 tsp. instant onions
1/2 tsp. salt
1/2 cup cheddar cheese, shredded
1 cup potato chips, crushed

Mix first 8 ingredients.  Place in 8" square pan and top with cheese and chips and bake @ 450 10-15 minutes until bubbly.  I like to serve with plain water crackers.

Hawaiian Chicken Salad

4 cups cubed cooked chicken breast (4 large breast or 2 cans)
2 cups diced celery
1 cup mayonnaise
1 cup sliced almonds
1-20oz. can pineapple tidbits, drained
1 pound seedless grapes, cut in half

In a large bowl, combine the chicken, celery, mayonnaise, and almonds, and mix well. Gently fold in the pineapple and grapes.

Serves 8-10

Hopefully all the time.  Don't keep these recipes locked up for special events.

Cooks Tip:  Costco makes an INCREDIBLE chicken salad.  Made with their rotisserie chicken.  I have been know to get it many times.  I stretch it for events by pulsing it in my processor to thin it out a little, but keep some of those chunks, that's what folks will be talking about after the party is over.

Menu Plan Monday


It's been a looonnngg while since I posted, almost a month.  However, I was fasting from the computer world other than work during the Easter season to focus more on what I believe, what I hold true to my life, and to give me time in the things that I needed to do this past month.  I also MOVED! yes, picked up a whole household, and moved 11/2 miles away.  We sold our home, wanted something a little bigger for our family.  So, here I am, about a month later and FINALLY cooking in our new place.  I am still staying a little simple as spring is here and we like it a little lighter since it is so hot out already in south FL, and I am STILL unpacking, so simple is good!  I picked a few southwest meals this week in honor of Cinco de Mayo since we love Mexican food here at hour home.  Here's whats on the menu this week! 

  • Taco Salad - Beef for Hubs & the kids, Meatless for me - I'm going to have black beans this time!
  • Southwest Roasted Chicken Breasts/Mashed Potatoes/Green Beans-roasted squash/Fresh Fruit
  • Chicken  Quesadillas (left over roasted chicken), chips/salsa corn on the cob, fresh fruit
  • Breakfast for dinner (bacon, eggs, cinnamon rolls), fresh fruit smoothies
  • Grilled Turkey Hot Dogs, chips/dip, fresh fruit, mixed green salad

I am helping make cupcakes for a wedding this month, so I am doing a trial run with a carrot cake cupcake/cream cheese frosting.  I will post recipe/pics when I make them this week!

RECIPES


Salsa al Fresco a.k.a Fresh Salsa
2 containers grape tomatoes, chopped                                                 
1 medium onion, diced                                 
1 jalapeno, finely diced                                                                             
1 bunch fresh cilantro, rough chop         
1 lime, juice squeezed                                                                              
1 tsp. sea salt                                                                
1-2 garlic cloves, pressed/finely chopped
Combine all ingredients together, and finely chop or pulse in food processor.  Squeeze lime and sea salt over top, mix and serve with tortilla chips or in your favorite Latin recipes.
Taco Salad
Cook’s Tip: Adjust ingredients based on how many you will be serving.
Romaine Lettuce, torn/shredded                                                           
 1 lb. ground beef/poultry/pork                                 
1 pkg. taco seasoning                                                                                  
 1 onion, chopped                                                         
Cheddar Cheese, shredded
1 can sliced black olives, optional                          
1 can black beans, drained                                                                                    
1 can corn, drained or frozen                                                    
Sour Cream                                                                                                
Avocado or Guacamole                                                               
 Salsa                                                                                                           
Tortilla Chips                                                                      
Arrange lettuce on bottom of platter.  Layer ingredients ending with cheese.  Top with sour cream, guacamole, and your favorite salsa.  Serve with tortilla chips.
Easy Guacamole
2 ripe avocados                                  
sea salt                                 
½ cup sour cream                                                             
2 Tbls. Salsa                                               
juice from 2 limes, zest optional          
Mix ingredients together well.  Cover with plastic wrap touching dip so it does not oxidize.  Serve with chips.

White Chocolate-Orange Cupcakes


If you know me personally you know I have taken into the art of the gourmet cupcakes.  An area of the kitchen (baking), I really don't fancy as a favorite (I hate the mess and tons of dishes).  So the picture isn't the greatest, but if you could taste them you would never mind.  My littliest loves anything orange, and well- white chocolate just seemed like a great pairing to the fresh orange flavor of these birthday cupcakes we served for his 2nd birthday.  A far cry from the a-typical store-bought-artificial-flavor I don't really like and I am tiring of paying for the conveinence, this is why I started to "create" something just a little more special for such a momentous occasion.  Enjoy! 

These are so easy try them!

1 bag of orange slice gum-drop type candy
1 white cake mix + ingredients to prepare
1 box of instant white chocolate pudding
2 oranges, zested
Orange Extract
Recipe for Classic Butter Cream
Quality White Chocolate Candy Bar (I like Lindt)
Clear Decorator Sugar

Prepare the white cake mix as directed and add pudding mix, zest of one orange, and 1 teaspoon of orange extract (or more for stronger taste) - (taste the batter :) ).  Place batter in cupcake liners about half to two thirds full (this makes a nice flat topped cupcake for frosting).  Bake as directed.  Remove cupcakes onto a  rack until completely cool.  Meanwhile, prepare Classic Butter Cream recipe and add zest of one orange, and additional orange extract to your taste.  It's okay to taste as you go, especially with the butter cream - this is what will make or break a great frosting.  Place frosting in a decorator bag with a tip or in a large zip bag and clip corner.  Frost a swirl on the top of each cupcake.  Take a vegetable peeler and "peel" the side of the chocolate bar to get swirls of chocolate.  Add to top of cupcake along with a little decorator sugar-top with an orange slice.  And there you have one terrific-well-loved cupcake.  Perfect for a spring or summer events.  Great with lemon or lime as well!  With all the great little bulk candy areas at Super Target or the mall you can be sure to find something fun to top the cupcake off with-

Menu Plan Monday

It's that time of the week again.  I just got back from the farmers market and I am so excited to make some unbelievable meals for the week.
Here is what is cooking in our kitchen this week:

  • Southwestern Grilled Chicken Tostatas, Fresh Fruit, Fresh Salsa
  • Vegetable Barley Soup with Whole Wheat Lavish Bread w/ Hummus, Fresh Fruit (Meatless Monday)
  • Breakfast for Dinner (Eggs, Turkey Sausage), Fruit Smoothies
  • New York Strip Steaks, Mashed Potatoes, Green Beans
  • Turkey Hotdogs, Corn, Sliced Apples with Cinnamon Sugar
I made some delicious vegan vegetable barley soup and fresh mango salsa today. See the recipes below.

Vegan Vegetable Barley Soup

2 stalks celery, diced
1 sweet onion, diced
1 cup of diced carrots
2 garlic cloves, minced
3/4 pearl barley
2 plum tomatoes, diced
1/2 cup of corn kernels
1/2 cup of peas
2 cartons of vegetable broth
1 bay leaf
sea salt
fresh ground pepper
olive oil

Saute' on medium heat celery, onion, carrots, and garlic in olive oil in oversized skillet or dutch oven for 5 minutes.  Add barley and toast in skillet for 2-3 minutes.  Add bay leaf and broth, stir.  Add salt/pepper to taste.  Add tomatoes, peas and corn and cover for 30 minutes on simmer.  Remove bay leaf before serving.  Season to taste. Enjoy!
**This can be made in a crock pot.

Fresh Mango Salsa

1 mango, diced
2 ripe tomatoes
1 small sweet onion
1 jalepeno, seeds/vine discarded
1 small bunch of fresh cilantro
sea salt
fresh lime juice

I LOVE my manual food processor.  I pop all the ingredients (except Mango) in and pump away to the desired consistency that you like.  I like mine super fine like my favorite salsa from Chili's restaurant, and this manual food processor does the job. 

Check out Pampered Chef's new MANUAL FOOD PROCESSOR ,compact and perfect for this fresh salsa treat.  I have used my processor also for chicken salad, and fresh strawberry ice just this past weekend.

Menu Plan Monday


Spring is here!  What does that mean...for me- cleaning out the pantry and freezer for various reasons.  Here is my plan for this week so I am not caught off guard.  Since we are moving in the next three weeks or so, I am picking meals that we can use up pantry items and freezer items - less to pack is my method.....

  • Panko Chicken Fingers, Roasted Red Skin Potatoes, Green Beans with Garlic
  • Chicken Tortilla Soup, Quesadillas, Corn (recipe following)
  • Stir-Fried Pork with Green Beans, Brown Rice (recipe following)
  • Roasted Turkey Breast, Mashed Potatoes, Peas
  • Freezer Clean-Out (misc. bags of conveinence foods), Fresh Fruit Bowl
Chicken Tortilla Soup (adapted from Food Network Kitchen Easy Cookbook)

2 Tbls. vegetable oil
1 medium onion, chopped
2 cloves garlic, sliced
1 chipotle chile en adobo, minced
1 Tbls. chili powder
2 teaspoons kosher salt
6 cups chicken broth, low-sodium
1 cup corn kernals, fresh or frozen
1 ripe tomato
1 cup shredded chicken
1/2 cup cilantro leaves
1/4 cup fresh squeezed limes juice (2 limes)
corn tortillas chips/lime wedges (optional)

Heat oil in medium saucepan over medium-high heat.  Add onion, garlic, chipolte, chili powder, and salt, cook until onion softens, about 5 minutes.  Add the chicken broth, and bring to a boil, bring down and simmer for 10 minutes.  Add corn and simmer for 5 more minutes.

Pull the saucepan from the heat and stir in the tomatoes, chicken, cilantro, and lime juice.  Serve and top with chips/lime juice.  This is a fast and easy recipe!

Quesadillas - easy, quick, and served as a side with soup

1 flour tortilla per person
Cheddar/Jack or Mexican blend cheese
Queso Blanco (white latin cheese)-optional
Southwestern seasoning
Salsa/Sour Cream

Layer ingredients on one side of tortilla.  Fold over tortilla and press down.  Grill, oven bake or pan fry the quesadilla until desired done-ness or until cheese is melted.

Stir-Fried Pork- stir-fries can take a few extra steps, but worth the time with all the flavors.  If you have your ingredients prepped you can be sitting down to dinner in less than 30 minutes, start to finish.  Chicken and Shrimp could be substituted, however, the pork stays jucier.

1 lb. pork tenderloin, cubed
3 scallions, thinly sliced (white and greens separate)
3 cloves garlic, minced
1-1 inch piece of ginger, minced
1 T soy sauce
2 tsp. sugar
2 tsp. corn starch
1 tsp. sherry
1 tsp. dark sesame oil
5 T. peanut oil
1 lb. sugar snap peas or green beans
Kosher Salt
fresh ground pepper
1 T. Hoisin Sauce
hot cooked brown rice/Jasmine rice

Toss the pork with the scallion whites, half the garlic, half the ginger, the soy sauce, sugar, 1 tsp. of the corn starch, the sherry, and the sesame oil.  Marinate at  room temperature for 15 minutes.  Mix the remaining 1 tsp. of cornstarch with 2 T. water.

Heat a large skillet over high heat.  Add 1 T. of the peanut oil and heat.  Add the beans and the remaining garlic and ginger; stir-fry until the beans are crisp, but stay bright green.  Season with salt and pepper to taste and pour into a large bowl.

Heat the skillet over high heat again and add 2 more tablespoons oil.  Add haf the pork mixture, season with salt and pepper to taste, and stir-fry until lightly brown, about 2 minutes.  Add the first atch of pork to the beans.  Repeat with the rest of the oil and pork.  Return the beans and pork to the pan.  Add the hoisin and the cornstarch mixture.  Cook until the juices thicken, about 1 minute.  Mound the stir-fry on a serving platter or divide onto 4-6 plates.  Scatter the green onions over top and serve with hot rice.  Yummy!

-use your sale ads from the paper or online to create your menu/shopping list (this is the part that saves you $$)-be flexible {plan 5-7 meals and pick from those-instead of saying you will have ___ on Monday-that may throw people for a loop and then not continue}-continue once a week to set aside time to do this-take input from your kids and family members-if you don't blog and you need accountibility to do this EMAIL your menu's to me (cookwithbarb@aol.com)- I would be glad to praise you for your efforts-help you with recipe ideas or give your resources-and overall be your own cheerleader to help you stop asking yourself

Here are my 5 menu ideas for the week!


I decided to go old school this week, and scan some of the thousands of recipes I have in books, tear-outs, or my faithful recipe card box.  As another fellow blogger mentioned in the past week, there are tons of recipes in fabulous blogs, and the internet site, but I never want to lose sight of some of my family's favorites and  those tried and true ones handed down!

So here is my 5 days of meals - no specific order - just when we feel like what's on the menu - and the shopping is done for the 5 below!

  •  Crustless Spinach & Feta Pie/Fresh Fruit (recipe below)
  • BBQ Grilled Chicken Quesadillas/Salad
  • Southwestern Grilled Chicken Ceasar Salad
  • Breakfast for Dinner (Mom's Pancakes, Chicken Sausage, Scrambled Eggs)
Crustless Spinach & Feta Pies (a quick take on Spanakopita)

1 T extra-virgin olive oil
1 10oz package frozen spinach, thawed
4 scallions, thinly sliced
3 eggs
1 T bread crumbs
2 t dried mint
1 1/4 t kosher salt
fresh ground pepper
pinch of cayenne
1/2 cup Feta cheese

Preheat oven 400 degrees.  Heat oil in skillet, and add drained spinach and scallions and cook, stirring until dry, about 4 minutes.  Transfer to colander and squeeze out any additional mositure.  Brush 4-6oz ramekins with olive oil and place on baking sheet.

Transfer spinach ingredients and rest of ingredients except Feta to a food processor-pulse until finely chopped.  Remove blade and stir in Feta.  Bake until edges are set, but slightly soft in center-about 20 minutes.  Turn oven off and leave for 5 additional minutes.  Invert onto plate and serve with a veggie salad or Tazatiki Sauce-Yum!

My variation:  I added a bit more Feta on the top, and a few cloves of garlic.  I also made mine in a 9x9 and doubled the recipe to have leftovers to share with my neighbor and have for breakfast!  I cut it into 12 pieces and served two per person.  :)

Menu Plan Monday

This week will be a fun week!  A fun week creating in the kitchen.  It's my oldest-6th Birthday.  Not only will be have a few celebrations throughout the week, there will be some yummy treats to go along with them-mostly sweets!
Here is one great recipe I will be making first for the family celebration!  Pictures will post tomorrow evening!

Which means, I must stay on track this week with some healthy meals to equal out a bit of that sugar...:)
Here is what will be cooking on my stove this week:
  • Easy Lemony Chicken Picatta with a Garden Salad/Linguine/Fresh Fruit (recipe below)
  • Balsamic Roasted Vegetable Sandwiches on Crusty Bread/Fresh Fruit
  • Guiltless Alfredo with Grilled Shrimp (held over from last week)-(recipe below)
  • Buffalo Cheese-Stuffed Burgers/Roasted Potatoes/Fresh Fruit
  • Grilled Mahi-Mahi over Field Greens/Fruit Smoothie Shots

Easy Lemony Chicken Picatta
(adapted from The Joy of Cooking)

Prepare Chicken Cutlets by sauteing boneless breasts in canola oil.  I like to put a light coating of flour/panko crumbs on mine.

Sauce:
Green onions or shallots
2 medium lemons
1 cup chicken broth
2 tablespoons of butter
any drippings left from resting chicken


Drain all but a tablespoon of oil in your fry pan from your chicken.
Add 2-3 tablespoons green onions or shallots, chopped and
saute for about 3 minutes.
Add lemon juice from 1-2 lemons based on taste.  Simmer for a minute or two and add broth.  Allow to reduce to 1/3 from original amount.  Finish with a few tablespoons of butter and any drippings that collected on resting chicken, allow to melt into sauce.  Pour over chicken and serve immediately.  **For a thicker sauce you can add a few tablespoons of flour/cornstarch/Wondra to thicken it up before adding the butter.  Capers can also be added for taste.

Guiltless Alfredo
(recipe from buddy Gevay :) )

2 cups low-fat milk
1/3 cup cream cheese
2 tablespoons flour
1 teaspoon salt
Blend these ingredients together in a blender until smooth.

On medium-high heat warm 1 tablespoon of butter, and add 3 minced cloves of garlic and saute about 3 minutes.  Add blended milk mixture, stir and cook for 5 minutes until thick.  remove from heat and stir in 1 cup grated Parmesan cheese.  Cover and let stand for 10 minutes.  Serve over pasta.  Garnish with fresh parsley.

Menu Plan Monday


Dinner this week is going to be a few comforting dishes.  Here in South FL our winter is starting to wind down.  With several days in the high 70's and hitting 80 a few times this week, stews, soups, and casseroles will be far and few between.  Luckily, we are able to grill out year-round which our family enjoys.  We love eating outside under the stars with the brisk Atlantic breeze.  So, before the winter starts to change in the coming weeks, we will be enjoying these comforting favorites.

Menu Plan Monday

I took a week off last week, and boy was I in a mess.  There was defiantly food in my house, but I felt myself sinking instead of swimming.  We ate out WAY too much last week for convenience instead of enjoyment-although we have had the most incredible weekend with date nights each night with each of our children individually. Our schedule was quite busy, but I still like to have my hot meals for my children at least~

I am back on the wagon this week, with lot's of plans for impromptu meals-ready to go...

Here is what is cooking in our tasty kitchen-
  • Roasted Turkey Caesar Salad with Fresh Fruit (left over Rotisserie Turkey Breast)
  • Individual Homemade Pizzas with our favorite homemade sauce, garden salad, fresh fruit (see instructions below)
  • Grilled Chicken Quesadilla's, Corn on the Cob, Garden Salad
  • Cheeseburger Pinwheels, Green Beans, Potato Chips
  • Beef Stew with Beer & Paprika, Biscuits
  • Leftovers- I just know we will have leftovers!  I plan to freeze some of the stew for another cool evening.
**Individual Pizzas can be made to suit any taste.  Take frozen bread roll dough (not frozen rolls), and place on your pizza stone or baking sheet for about an hour or two before eating and drizzle with olive oil.  When soft enough, pat out (have kiddos help), and top with your favorite toppings.  We like everything from traditional to our own creations.  This is also a quick lunch, so much more healthy than frozen pizzas and cheaper too.
C-man's favorite topping is turkey pepperoni and lotsa mozzarella cheese. Hubs enjoys sauteed Italian sausage and cheese, and my personal fav is pesto sauce with mozzarella and lot's of fresh garlic - watch out!  These can be made in your oven or on your grill.  Just be sure you brush olive oil on your grates before throwing down the dough.  Cook carefully for 1-2 minutes, flip and top~Baked in the oven can be for about 20-25 minutes or until crust is done at 350.  Of course you can make your own dough or purchase pizza dough, but we have come to love the convenience of the bread dough for quick planning in the kitchen.

Have a FANTASTIC week, I cannot believe we are already through the middle of the first month of the year. Time is flying past us, which make me want to remind you how important eating with your family is.  Gather round the nearest table and enjoy talking to one another (a lost art since hand helds have come to adorn every table I see when I dine out with my hubs-sad that people cannot put it away for the littlest time to enjoy real conversation.

Menu Plan Monday

Here I am again...back to reality...I have lived in a fantasy world for the last few weeks of dinner out, to-go, and cooking on the fly...It's back to basics, trying to clean out the pantry/freezer this month from all the grocery shopping done over the last month of cooking and entertaining.

Is menu planning going to be added to your resolutions goals?  It works, it cuts down on your grocery trips and bill, and allows you not to stress at 5 o'clock!

Here is what we will be eating at our home this week!
  • Spaghetti & Meatballs/Green Salad/Fresh Fruit - Plain and Simple to get the week started!  I do like our family recipe of  homemade sauce I triple/quad the recipe so I always have it available in the freezer-I have some vegetarian and some with meat added to the sauce.
  • Grilled Mahi Mahi/Green Beans/Fresh Fruit
  • Chicken Parmesan/Ceasar Salad/Fresh Fruit **using leftover sauce from spaghetti night or vice a versa
  • Cheeseburger Pinwheels/Green Salad/Applesauce
  • Leftover Buffet

Top 5 Appetizer Recipes for New Year's Eve!


Let's ring in the new year - whether your throwing a house party or attending one (does anyone even go out anymore?) here are my top 5 recipes for delicious appetizers (most include my favorite of some sort of cheese-sorry dairy-free fans) to share among your guests or bring to a party!

#5 Buffalo Chicken Dip

2-8 oz blocks of cream cheese, softened
1/2 cup of blue cheese dressing
1/2 cup of ranch dressing
1 cup of Frank’s Red Hot Buffalo Wing sauce
3 skinless, boneless chicken breasts, boiled and shredded
2 cups shredded cheddar cheese

Preheat oven to 375.
In a large bowl combine softened cream cheese, ranch dressing, blue cheese dressing, and buffalo wing sauce. Using a hand mixer, mix until smooth and creamy, about 3 minutes. Fold in shredded chicken and 1 cup of shredded cheese. Pour into a baking dish. Top with remaining 1 cup of shredded cheese.
Bake for 20 minutes, or until dip is warmed through.
Serve with tortilla chips, bread, crackers, pretzels, and celery. Note: You can substitute one cup of either dressing or split between the two.

#4 Hot Caprese Dip (adorned from How Sweet It Is)

10 ounces fresh Mozzarella, cubed or Whole Milk Mozzarella
2 Roma tomatoes, seeded and juiced
3 tablespoons freshly chopped basil (or about 1 tablespoon dried) + more for garnish
Preheat oven to 375.
Make sure tomatoes have as much juiced squeezed out of them as possible – this will prevent the dip from becoming soupy or watery. In a small baking dish, combine chopped cheese, tomatoes and basil and mix. Bake for 15 minutes, then broil for 2 minutes so cheese becomes bubbly and golden. Serve immediately with crackers, melba toast, or french bread.
Note: dip may appear “watery” which is why it is VERY important to get as much moisture out of the tomatoes as possible. Also make sure dip is consumed immediately, as the longer it sits, the more juice that develops. Don’t worry if there is a little bit of juice – it is still delicious!

#3 Brown Sugar Dijon Baked Brie

4 inch round-Brie cheese with rind
1/2 cup brown sugar
1 tablespoon Dijon mustard
1/2 cup sliced almonds or pecans
1 French baguette
Additional sliced almonds to garnish

Slice brie horizontally, set aside.  Mix together brown sugar, Dijon, and almonds. With cut side up, place half of mixture on brie.  Top with second half of brie-cut side up (this is so that it doesn't melt all over itself when heating up) and layer with rest of Dijon mixture and sliced almonds on top.  Bake @ 375 degrees for 8-10 minutes until brie just softens.  Remove from oven and serve immediately with slices of the baguette and fresh fruit.

# 2 Gorgonzola-Onion Crustini - These are my absolute favorite appetizer!

1 container of Gorgonzola cheese
1 small wedge of domestic Parmesan or Romano cheese, grated
1 medium sweet onion, finely chopped
3/4 - 1 cup of mayonnaise (not fat-free)
1-2 garlic cloves, pressed
cracked pepper
1 French Baguette
fresh parsley chopped for garnish

Slice baguette in 1/2 inch slices and place on baking sheet. Combine the cheeses, mayonnaise, onion, garlic, and cracked pepper together.  Generously spread mixture on bread slices and bake at 350 degrees for about 10-12 minutes or until golden and bubbly.  Remove from oven to a platter and garnish with parsley. 
Note:  This mixure can be combined up to a few days before using.  Just remove from refrigerator and place on bread and cook.


#1 Easiest Elegant Chardonnay Cheese Fondue (okay so this is my favorite too...)

1 can of condensed cheddar cheese soup
1 – 1 ½ cups Cheddar/Swiss shredded cheese
¼ cup beer/wine/apple juice
1-2 clove garlic, pressed
1/8 tsp. Tabasco
Dippers- bread cubes, assorted veggies, apples, pears, ham cubes

Combine all ingredients except dippers in a microwavable bowl.  Stir together and microwave for 3-4 minutes or until smooth.  Pour into heat proof dish with sterno or a lit candle underneath.  Serve immediately with dippers.  Enjoy-EASY!

Welcome to another edition to Menu Planning Monday!  There are only a few more weeks of 2010, hard to believe, and a few more menus.  We have a few events this week, but we still need to have a plan.  Some easy dishes as well as some comfort food added this week since it is FINALLY cold (54 degrees) in south Florida-I know some of you are laughing....).  Enjoy~

  • Crunchy Baked Chicken/Mashed Potatoes/Green Beans
  • Turkey-Wild Rice Soup/Beer Bread/Salad
  • Grilled Asian-Style Mahi-Mahi/Caesar Salad
  • Beef Tacos/Yellow Rice/Salad
  • Leftover Buffet
Crunchy Baked Chicken

4 large chicken breast
shredded Swiss/Monterrey jack
1 can of fat-free/reduced sodium cream of chicken soup
1/2 can white wine or chicken broth
large handful of croutons, crushed

Place chicken in 9x13 and cover with salt/pepper.  Combine soup and white wine, set aside.  Top each breast with cheese, and pour over soup mixture.  Top off with crushed croutons.  Bake at 375 until chicken is cooked thoroughly.  I like to cover with foil for first 30 minutes, then uncover to finish.

Turkey and Wild Rice Soup

1 cup shredded  carrots
1 cup sliced mushrooms
1/2 cup sliced celery
1/2 cup chopped onion
1 TBLS butter
1/2 cup flour
2 small cans of chicken broth (I like low-sodium)
1 can low-fat evaporated milk
1 1/2 cups cooked wild rice (I use the quick rice or brown rice)
1 cup diced turkey or chicken
1/4 cup toasted almonds
Salt/pepper to taste

Melt butter in large sauce pan over medium heat and saute carrots, mushrooms, celery and onion for about 4 minutes or until crisp tender.  Stir in flour, gradually add broth and milk, whisking until blended using a whisk.  Bring to a boil.  Stir in rice and turkey, reduce heat; simmer uncovered for 5 minutes.  Serve with toasted almonds on the top. Delish with leftover turkey or chicken!  This is considered a light recipe per 1 1/4 cup serving - 240 calories/8 fat/2 fiber

What to do with those Thanksgiving LEFTOVERS-without making a casserole!


How many of you even have Thanksgiving Leftovers?  Our family, like many, makes a plethora of delicious traditional and non-traditional dishes to share pot-luck style for Thanksgiving.  I can definitely say we do not over look the true meaning of how it was in the beginning when our forefathers sat down to some wild game, grains, nuts, berries, and some veggies, but all of us in our family love putting on a good meal with each other when we can, so there are no stops when entertaining for any occasion.  We look forward to granny's cheesy beans or my aunties prize-winning pies, or our highly requested crusty sausage-cornbread stuffing with cranberries or perhaps one of my favorites- granola-topped sweet potato souffle.  And then there is the turkey....and the regulars like mashed potatoes, rich gravy, biscuits and cornbread, and everything else that adorns the beautiful tablescape my mama prepares.  But what happens to the rest of the food after it has been dived up to relatives in little plastic containers to take home, what do they do with it?  Here are a few favorites our family has shared:

Microwave White Turkey (or chicken) Chili


3 whole heads garlic (about 48 cloves), unpeeled
¾ tsp salt, divided
3 tbsp olive oil, divided
2 poblano peppers
1 medium onion
2-3 cups cooked turkey
2 tbsp Southwestern Seasoning Mix
2 cans (15.5 oz each) Great Northern beans, drained
1 jar (16 oz) salsa verde

With heavy knife, slice about 1/4 in. off the pointed top of garlic heads to expose cloves. Place garlic cut side up in large mixing bowl. Sprinkle garlic with 1/4 tsp of the salt and drizzle with 2 tbsp of the oil. Cover batter bowl with lid; microwave on HIGH 3 minutes or until garlic is soft. Set aside to cool.   Meanwhile, finely dice peppers. Chop onion, and combine peppers and onion in covered microwavable baker. Trim and finely dice turkey.  Add turkey, seasoning mix, remaining 1 tbsp oil and remaining 1/2 tsp salt to baker; mix well. Microwave, covered, on HIGH 4 minutes; stir to separate turkey. Cover; microwave an additional 4-6 minutes or until turkey is cooked through.  Meanwhile, gently squeeze cooled garlic from heads into batter bowl (discard skins); mash and add beans and salsa to batter bowl. Transfer bean mixture to baker; mix well.  Microwave, covered, on HIGH 5-7 minutes or until chili is heated through. 

Turkey and Cranberry Wreath ***This is our favorite!
2 pkg. ( 8 oz. each) Pillsbury crescent rolls              3 tablespoons snipped fresh parsley
½  cup mayonnaise                                                   2 cups chopped cooked turkey
1 ¼  cups ( 5 oz) shredded Swiss cheese                2 tablespoons honey Dijon mustard
½  teaspoon coarsely ground pepper                       1 pkg. sweetened dried cranberries

Preheat oven 375 degrees. In large mixing bowl combine turkey, 1 cup of the cheese, celery, cranberries, parsley, mayonnaise, mustard and black pepper; mix well.

Unroll 2 pkgs. of refrigerated crescent rolls; separate into 16 triangles. Arrange eight triangles in a circle on large round pizza pan with wide ends 3 inches from edge of baking stone and points towards the outside. Points will extend off the edge of the baking stone. Arrange remaining triangles in center of baking stone, matching wide ends with triangles already in place. Points will overlap in center. Using a small rolling pin or your fingers, roll over seams of triangles where wide ends meet creating a smooth surface. 

Scoop the filling evenly over dough. Beginning with last triangle placed in center of baking stone, bring point of triangle straight across filling. Next bring point of opposite outside triangle diagonally across filling, covering point of previous triangle. Filling will show. Repeat, overlapping points of inside and outside triangles to form a wreath. Tuck last end under first. Sprinkle with remaining cheese and bake 30 minutes or until golden brown.

S'More Cups

These sure where a winner at a craft night I attended this week.  Something that seemed like fall, easy to eat, and were gone before the end of the night.






I am a budding photographer -NOT!  But I am trying to utilize my Canon SW20IS.  It is the camera that is a crossover between a point and shoot and a DSLR, manual/digital operation, takes great pictures, but sometimes I never know how they happened.  So, with all that said, pardon the pics if they get a little out of focus someday all the camera classes I have taken will click...

Back to the recipe...

7 full size graham crackers, crushed finely, 1 cup
6 TBLS butter, melted
1/4 cup powdered sugar

12 large marshmallows, cut in half
3 regular size chocolate bars, broken into 12 pieces each

Combine the graham crackers crumbs with melted butter, and sugar.  Use a teaspoon or small scoop and add to a mini muffin pan, and pat down and sides.  Place in a 350 degree oven for 4 minutes (you will see butter start to sizzle with crumbs.  After removing from oven, place one chocolate piece to each graham cup (it will begin to melt on it's own), press cut side of marshmallow in chocolate, and place back in the oven for 1-2 minutes until the marshmallow becomes soft, but not melted.  Remove, and allow to cool for 15 minutes or so.  Remove cups CAREFULLY to a rack with a toothpick, they will get crumbly if you use a knife.  Meanwhile, microwave in small bowl the rest of the chocolate pieces, stirring after 20 seconds, until smooth and melted.  Take graham cup and dip in melted chocolate or drizzle on top.  These are SO EASY, and so much fun to take to an event.  Plan on making a double batch, because there won't be leftovers.  Makes 24 S'More Cups

This week I am eating out of my pantry/icebox in reference to my previous post on curbing down a bit.  I found some great deals I got a few weeks back hiding in the bottom of the icebox, as well as some hidden favorites in the back of the panty.  Me, being a foodie, I am trying to come up with creative ideas to use what we have and my grocery trip will only be for necessities.  Here is goes....

This week we are having:

  • Turkey Tacos (shhh-don't tell hubs-he's not a fan of ground turkey)/field green salad/fresh fruit
  • Grilled Steak Burgers (thanks mom for the Ohmaha Steaks Gift Card)/deviled eggs/oven fries
  • Omelettes with chicken apple sausage/fresh fruit
  • Grilled Chicken Skewers with Sausage & Pancetta this is a great recipe we have repeated it so many times./Fresh Cut Fruit/Green Beans
  • Philly Cheese Steak Sandwiches (I love this concept, done in minutes, and is delicious- and I am controlling the meat, etc.)/fresh cut fruit/chips
  • Chicken & Sausage Gumbo (craft show soup mix)/BEST Cornbread/Field Green Salad

A Few Fall Recipes Worth Sharing

Maple-Glazed Chicken Breasts

Oh my goodness was this delicious...I made it last week for the babe and myself for lunch to try it out for last weeks menu.  I found the recipe on fellow blogger-Liz who inturn credited Racheal Ray for the easy, quick recipe. I put my chicken over field greens, for something different and added some candied pecans and chopped apple, and dried cranberries.  I used a blue cheese yogurt salad dressing {light and delish}. What an explosion of flavors in my mouth.

1 lb. chicken tenderloins/breasts, trimmed
2 tsp. Montreal Steak seasoning or nice garlic/pepper rub
flour to dredge
2 T. butter
1/4 cup REAL maple syrup

Lightly coat chicken with seasoning and flour and saute' in butter in a stainless saute' pan (if you have one).  Cook approoximately 6-10 minutes or until done.  Remove breasts and keep warm.  Add syrup to pan, and deglaze bits of seasoning and chicken with your cooking tool.  Cook syrup on medium/low for about 2 minutes, stirring constantly.  Add chicken back to pan to reheat and spoon maple sauce over chicken.  Serve chicken with mashed potatoes/ mashed sweet potatoes, or perhaps the lower carb way like me - over field greens. I think next time, I may add a little taste of dijon mustard to the maple in the pan, to get a maple mustard flavor going....

I also tried this recipe, CRUNCHY MAPLE CRUSTED CHICKEN, with a crusty flavor of maple...hard toss up, BOTH were GREAT recipes...I liked the crispy recipe a little better, because if I was splurging on the maple syrup, I rather splurge on the crispy coasting from pan fying....YUMMY!!!

Pumpkin Bread
Everyone has their favorite pumpkin bread recipe.  I think the one I use, I have seen a few places or another.  I do substitute half of the oil with one single cup of unsweetened applesauce as a sidenote to the recipe as shown.  I also add melted white chocolate drizzled across and some sweet cinnamon sprinkle {cinnamon flavored cane sugar}
I just love the deep pumpkin spicey flavor, it is always a favorite and always gone in no time.

1 (15oz.) can solid pumpkin
1 cup canola oil (may substitute 1/2 cup with applesauce)
2 2/3 cups sugar
4 eggs
1 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 cups + 2 T. flour

Cream together first four (4) ingredients.  Add spices, stir well.  Add baking soda, powder, and salt.  Add one cup at a time of the flour, without over-mixing.  Bake at 350 degrees for 30 minutes or until cake tester comes clean.  Makes 2 large loaves or 6 mini loaves.  Allow to cool on wire rack out of pans for one hour.  When cooled drizzle melted while chocolate and sprinkle with cinnamon sugar sprinkle. **chocolate chips are fabulous added to the batter-toss with a T. of flour so they don't sink to the bottom. So yummy!


                                     
One of my all time favorite recipes that seems to make it's way out of my recipe collection at this time of year is my mother's recipe for Southern Pecan Tassies.  They are so yummy, and easy to tote somewhere for a get-together.  These days it seems everyone is looking for an easy way out when it comes to baked goods, but these are tried and true, reminds me of the past.  There are a few different versions out there, but I really think this one is terrific, first of all because it is the one my mama makes, but secondly, the crust is so good, and only takes a minute and homemade is nothing compared to using a pre-made pie crust! It's a soft neutral-flavored crust that is complimented by the sweet, nutty, and chewy inside. Its just a taste of happiness without all the calories of a slice of southern pecan pie [unless you eat a half of dozen].  The dough can be made ahead or used right away as I do.

Makes 4 dozen

1 recipe cream cheese pastry (recipe follows)

2 large eggs
1 1/2 cups packed brown sugar
4 tbsp butter, melted and cooled
2 tsp pure vanilla extract
2 cups coarsely chopped pecans
powdered sugar

Divide dough using a small scoop and roll each into a ball and place into mini-muffin tins. Mold the dough into each hole, pressing it up the sides. Chill while preparing the filling.
Heat the oven to 325F. Place the eggs, brown sugar, butter, salt, and vanilla in a large bowl. Whisk together until smooth. Add pecans.  Then with a teaspoon, fill each cup with a bit of the filling, careful not to cover the tops of the edge as it will be hard to remove without breaking, the whole pastry when cooled.
Bake for 20 to 25 minutes or until the pastry is golden brown around the edges.  Let stand 5 minutes. using the tip of a paring knife, run the blade carefully around the edges of the muffin cups to loosen the tassies. When the tassies are cool enough to handle, remove them from the pan and set on cooling racks. Sprinkle with powder sugar.

Cream Cheese Pastry

The original recipe suggests you do everything by hand but that's not so fun for me so I modified that and did it in my stand mixer.

1 cup (2 sticks) butter, at room temperature
8 oz cream cheese, at room temperature
2 cups all purpose flour, spooned in and leveled
1/4 tsp salt

Using a stand mixer and the paddle attachment, mix together the butter and cream cheese until smooth and thoroughly blended.  Mix in 1 cup of the flour and the salt, working until almost incorporated. Mix in another 1/2 cup flour, working until the flour is almost incorporated. Complete the process by kneading in another 1/2 cup flour. Do not overwork the dough.
Chill for a few hours or up to 3 days.
